Lovo simply means “feast cooked in the earth”. This popular celebratory meal is cooked in an underground furnace. For a lovo, lamb, vegetables, fish, and different local delicacies are marinated, wrapped together in banana leaves and left for 2-3 hours to cook.
Palusami is assembled using boiled fresh taro leaves, which are mashed into a creamy vegetable curry. In the non-vegetarian version, fresh meat or seafood is added to it while cooking. Finally, the dish is garnished with coconut cream.
